Soft chamomile leads the flavour, followed by aromatic lavender and the honeyed character of Persian echium. Rounded and slightly sweet, the infusion develops a deep violet-purple colour that’s lovely to appreciate in a clear glass.

Ingredients
Persian echium (Echium amoenum), chamomile (Matricaria chamomilla) and lavender (Lavandula angustifolia).
How to brew
Steep 1 teaspoon in water heated to 90–95°C for 5–8 minutes. Enjoy on its own, or add a drizzle of honey to complement the floral notes.
